Healthy Pea Houmous {With Lemon & Mint}

I’ve recently been making this delicious pea houmous which is so easy to whizz up with just four ingredients. It is flavoured with lots of lemon and mint which makes it a fresh, light and summery dip. Peas add natural sweetness as well as giving it an awesome colour.

I make pea houmous using frozen peas which can quickly be defrosted by rinsing them under a hot tap in a sieve. I never put raw garlic in houmous, I find it overpowering, but you could add half a clove if you like. I also make it without the mint sometimes - tweak it to suit your own tastes. Enjoy.


Healthy Pea Houmous {With Lemon & Mint}

INGREDIENTS:

  • 250g frozen peas, defrosted by rinsing under a hot tap in a sieve

  • 400g chickpeas, drained & water from tin reserved

  • Juice & finely grated zest of 1 lemon

  • Few fresh mint leaves (optional)

  • Sea salt to taste

  • Olive oil to serve (optional)

METHOD:

  1. Put the peas, chickpeas, lemon zest & juice and mint (if using) in a food processor. Blitz until smooth. You may need to stop and scrape the sides of the mixer a couple of times to ensure none of the ingredients escape. Add sea salt to taste and blitz again.

  2. Add 1-2 tbsp of aquafaba (the water from the tin of chickpeas) if the pea houmous is too thick and needs to be loosened up. Add a little at a time, blending well between each addition.

  3. Spoon into a serving bowl and drizzle with olive oil to serve if you like. You can also decorate it with a few extra chickpeas, peas and mint leaves to make it look pretty.

  4. Serve immediately or keep in the fridge and consume within 3 days.
