5 Minute 3 Ingredient Microwave Nutella Brownies

Mug cakes have been all the rage in blog-land for a couple of years now so I'm a bit late to the table with this. Here's my recipe, for 3 ingredient Nutella Brownies which can be cooked in the microwave. They are immense - dense, rich and chewy, super-easy to make and ready in 5 minutes.

Nutella Brownies are of course fabulous on their own. However, they are extremely good topped with crème fraîche and fresh berries. Vanilla ice-cream is always a good accompaniment for warm brownies. Sometimes I add some chopped nuts to the mixture as well, or a pinch of hot chilli powder. Adding a pinch of salt to brownies makes them taste more chocolately, so I have included that in the recipe as well. 

You can avoid extra washing up by mixing and cooking the Nutella Brownie mixture in a mug, but I quite like to split the mixture into two, or even three, little ramekins or espresso mugs. The recipe makes enough mixture for two large or three regular-sized servings. 

A little word of advice about baking brownies in a microwave - be careful not to over bake them. Microwave times vary - I have a Panasonic Combi which cooks Nutella brownies, in two ramekins, in 1 minute. If they are not cooked through after 1 minute cook for 10 seconds at a time, checking them at each interval with a skewer. The brownie mixture will cook more quickly if it's split into two ramekins than if it's cooked in 1 mug.


5 Minute 3 Ingredient Microwave Nutella Brownies

  • Makes: 2 large servings
  • Time: 5 minutes
  • Calories: 540 per serving

INGREDIENTS:

  • 125g nutella
  • 1 large egg
  • 30g plain flour
  • Pinch of salt (optional)
  • Icing sugar to dredge (optional)

METHOD:

  1. Mix the nutella and the egg in a bowl or a mug until smooth. Add the flour and salt (if using) and stir until well combined. 

  2. Spoon the mixture into two ramekins. Alternatively, you can cook the mixture in the same mug you mixed it in, but please note that It may take a little longer to cook.

  3. Microwave on full power for roughly 1 minute or until they are just firm and look set on the top. Use a sharp knife to check if they're cooked through (see notes above).

  4. Leave to cool before serving. Nutella brownies are so delicious topped with crème fraîche and fresh berries
