Simple Chicken Satay Stir Fry {Easy Peanut Sauce}

This easy recipe for Chicken Satay Stir Fry has all the yummy flavours of peanut satay sauce in an easy stir fry. It's great for smuggling vegetables into kids as the sweet peanut sauce disguises them well. Substitute the peppers for carrots, green beans, or any other vegetables you like. You can also substitute the chicken for pork if you prefer, or just have lots of mixed vegetables to make it into a vegetarian dish.

This easy satay sauce also is great for jazzing up chicken drumsticks. Make the satay sauce without the milk and spread all over chicken drumsticks. Marinade overnight the roast or BBQ.


Chicken Satay Stir Fry

Ingredients:

For the stir fry:

  • 400g chicken breast, diced

  • 1 tablespoon vegetable oil for frying

  • 1 tablespoon soy sauce

  • 1 clove garlic

  • 2 peppers, 1 yellow & 1 red, sliced

  • 4 x blocks medium egg noodles (that cook in 4 minutes)

  • Fresh coriander to serve (optional)

For the sauce:

  • 100g crunchy peanut butter

  • 30g dark brown sugar

  • 4 cloves of garlic, crushed

  • 2 tablespoon lemon juice

  • 2 tablespoon dark soy sauce

  • 1 teaspoon cinnamon

  • 1 teaspoon chilli powder (or to taste)

  • 200ml milk

Method:

  1. Prepare a large pan of boiling water for your noodles.

  2. Make the sauce by combining all the ingredients in a bowl until smooth. Put to one side.

  3. Heat the oil in a large wok or saucepan. Fry the chicken until brown along with the soy sauce and garlic for around 4 minutes.

  4. Add the peppers to the chicken and immediately drop your noodles into the boiling water. Cook the peppers for 2 minutes over a high heat stirring frequently. Add the satay sauce and stir until everything is well coated, keeping the heat high, for a further 2 minutes.

  5. Drain the noodles reserving a little of the cooking water. Add the cooked noodles to the chicken and peppers and reduce the heat. Give everything a gentle stir until it is well combined (this is not an easy job, but it will come together). If it becomes a little dry add some of the cooking water from the noodles. Serve immediately in warm bowls topped with fresh coriander if you like.
