Easy & Delicious Homemade Tomato & Basil Soup {Using Tinned Tomatoes}

Homemade tomato soup is so easy to make and much better than shop bought varieties. It freezes really well so perfect for batch cooking. It's cheap as chips made with tinned tomatoes. Add crusty bread for a quick & tasty meal.

If you like creamy soups you could stir in some double cream or crรจme fraรฎche at the end to serve. Add a chilli to make spicy tomato soup. Swap dried basil for rosemary or thyme. Give it your own twist. 


Easy & Delicious Homemade Tomato & Basil Soup {Using Tinned Tomatoes}

Ingredients:

  • 1 tbsp oil for frying

  • 1 onions, finely chopped

  • 1 large carrot, grated

  • 1 celery stick, finely chopped

  • 4 cloves garlic, crushed

  • 2 x 400g tins chopped (or plum) tomatoes

  • 1 tbsp tomato puree

  • 1 tbsp sugar

  • 600ml vegetable stock

  • 1 tsp dried basil

  • Salt & pepper to taste

  • Fresh basil & olive oil to serve (optional)

Method:

  1. Heat the oil in a large saucepan and fry the onion, carrot & celery for a few minutes until soft. Add the garlic and cook for one more minute.

  2. Add the tomatoes, tomato puree, sugar, stock and basil. Stir well and season to taste. Bring to the boil and simmer for at least 30 minutes. Blend until smooth.

  3. Stir through some chopped fresh basil and drizzle with olive oil to serve if you like. See notes for more variations & serving suggestions.
