  • 1 teaspoon dried oregano

  • 2 cloves garlic, crushed

  • Salt & pepper to taste

For the Greek salad:

  • 1 cucumber, peeled, de-seeded and diced

  • 300g cherry tomatoes, cut into quarters

  • Half a small red onion, finely sliced

  • 100g feta cheese, cubed

  • Handful of Kalamata olives or black olives

  • Small bunch chopped mint (optional)

  • Dressing: 3 tbsp olive oil, 1 tbsp lemon juice, 1 tsp dried oregano, salt & pepper to taste

To serve:

  • Pittas

  • Lemon wedges

  • Tzatziki or houmous (optional)

Method:

  1. Combine all the ingredients for the pork together in a bowl, including the pork, and mix well so all the pork steaks are coated with all the flavours. Put to one side.

  2. Combine all the ingredients for the salad in a bowl, apart from the dressing. Put to one side until ready to serve.

  3. Get a griddle pan nice and hot. Fry the pork loin steaks in batches for around 2-3 minutes on each side until cooked through. Keep warm until ready to serve.

  4. Serve the pork loin steaks with lemon wedges along with the dressed Greek salad, some lightly toasted pittas and tzatziki or houmous if you like.
