Quick Escabeche-Style Mackerel

This Spanish-inspired Quick Escabeche-Style Mackerel is a fast and easy because it used canned mackerel. Traditional mackerel escabeche is made by frying and marinating fresh mackerel fillets in oil and vinegar.

Princes Mackerel in Spicy Tomato Sauce are a delicious, versatile and healthy source of both omega 3 and protein. The sauce is packed with flavour so only a few extra ingredients are needed to make these mackerel fillets into a tasty meal. It's an easy and inexpensive way to get oily fish into your diet.

This Quick Escabeche-Style Mackerel is ready in just 15 minutes and can be served in a number of ways. Spoon it over rice, serve on a slice of crusty toasted bread, in a jacket potato or make it into a hearty salad with some fresh green leaves and crunchy croutons.


Quick Escabeche-Style Mackerel

  • Serves: 1 as a main meal

Ingredients:

  • 1 tablespoon olive oil
  • 1 small (or half a medium sized) red onion, sliced
  • 1 small carrot, cut finely or shaved into ribbons with a peeler
  • 1 garlic clove, crushed or chopped finely
  • Good pinch of dried thyme
  • 2 tablespoons red wine vinegar
  • 1 x 125g can of Princes Mackerel in Spicy Tomato Sauce
  • Fresh flat leaf parsley or rocket to garnish (optional)

 

Method:

1.     Heat the olive oil in a frying pan over a medium heat.

5.     Open the can of Princes Mackerel in Spicy Tomato Sauce and add to the pan – the sauce and the fish.

6.     Stir gently so the sauce coats all the ingredients without breaking up the mackerel fillets. Cook for a further 1-2 minutes until the fish is warmed through.

7.     Best served warm but can be eaten hot or cold. Serve on top of a slice of toasted crusty bread or over rice. Some mixed leaves make a good accompaniment or it can be served on its own with a big green salad.
