Cinnamon French Toast with Berry Compote {With a Healthy Makeover}

This Cinnamon French Toast with Berry Compote is a nice idea for a special breakfast or brunch. It looks pretty, it's healthier than a fry up and it's easy enough for the kids to help with. Some of the preparation can be done the night before making it super speedy in the morning.

I have made this recipe as healthy as possible, using skimmed milk, but I still think brioche is tastier than bread. I tried baking a couple of slices of Cinnamon French Toast, but they took ages to cook and stuck tight to the baking sheet. Instead of frying in butter, which is the traditional way, I used a little sunflower oil which cut down on the saturated fat.

Instead of serving the Cinnamon French Toast with syrup, I made a really simple, (slightly more healthy) berry compote. I used frozen berries which are cheaper, and retain their shape better during cooking. If you prefer, swap the compote for fresh berries and a drizzle of honey.


Cinnamon French Toast with Berry Compote {With a Healthy Makeover}

Ingredients:

For the Cinnamon French Toast:

  • 8 slices of brioche (I used a pre-sliced 400g loaf)
  • 2 eggs
  • 100ml skimmed milk
  • 2 level teaspoons cinnamon
  • 1 tablespoon sunflower oil for frying

For the fruit compote:

  • 200g frozen mixed berries
  • 75g brown sugar

Method:

  1. Start by preparing the Cinnamon French Toast, (which can be done the night before). Whisk the eggs, cinnamon and milk together until smooth. Take a large, shallow dish and lay the brioche slices in the bottom. Pour over the eggy mixture evenly and leave the brioche to soak for 30 minutes in the fridge (or overnight).
  2. To make the fruit compote, place the berries and sugar in a pan and warm gently until the berries release their juices. Simmer gently for a few minutes until the mixture has a jammy texture, but be careful not to cook the berries so much that they start to break down. Leave to cool while you make the French Toast
  3. Heat a little oil in a large frying pan and carefully give it a wipe with some kitchen roll to remove the excess oil. Fry the slices of French Toast, two at a time, for around 2 minutes on each side until golden brown and piping hot inside. Keep the cooked slices of French Toast warm until ready to serve. Serve with the warm berry compote.
