Healthy Berry Crumble With Crunchy Almonds {Can Be Made Vegan}

I've made this berry crumble healthier by keeping the calories down with a slightly thinner layer of crumble topping using a mixture of oats and flour.  It can also be made vegan by substituting the butter with coconut oil.

Berry crumble is really quick and easy to make, but you can make the berry filling and the crumble separately in advance, then assemble just before baking. Baking takes just 12 minutes in a combi, or half an hour in an oven. 


Healthy Berry Crumble With Crunchy Almonds 

  • Serves: 2
  • Time: 10 mins + 15 mins baking
  • Cost: 45p per serving
  • Calories: 345 per serving

For the berry filling:

  • 200g mixed frozen berries
  • 5g corn flour (around 2 level teaspoons)
  • 40g golden caster sugar
  • Tablespoon Amaretto (optional)

For the oat & nut crumble topping:

  • 25g rolled oats
  • 25g plain flour
  • 25g butter OR coconut oil
  • 20g Demerara sugar
  • 1 teaspoon cinnamon (optional)
  • 15g toasted flaked almonds

To cook in a combination microwave:

  1. To make the berry filling, combine the berries, flour, sugar and Amaretto in a bowl. Spoon the berry mixture equally into two ramekins.
  2. To make the crumble topping, combine the oats, flour, sugar, butter or (coconut oil) and cinnamon in a bowl. Rub with your fingertips until the mixture resembles breadcrumbs. Stir through the nuts and sprinkle the crumble mixture equally and evenly over berry filling in the ramekins.
  3. Cook on CONVECTION 230ยบC + GRILL2 + SIMMER MICROWAVE for 12 minutes until the topping is golden and crispy and the berry mixture is bubbling around the edges.

To cook in an oven:

  1. Pre-heat the oven to 180 C / gas mark 5.
  2. Follow steps 1 and 2 as above.
  3. Bake for around 30 minutes until the berries are just starting to bubble around the edges.
