Panini Pizza
If you are looking for a low fat pizza or healthy pizza then this is probably as close as it gets. This panini pizza is ready in 15 minutes and contains half the calories of a takeaway margarita.
This recipe is for a basic cheese and tomato panini pizza but you can add toppings such as tuna, ham, chicken, peppers, sweetcorn or olives if you wish. I've recently started doing a BTEC in Healthy Eating, I picked up this recipe from the course.
Here's great tip for fussy eaters - blend up different cooked vegetables in with the tomato sauce. A piece of broccoli will just end up looking like herbs, and they're unlikely to notice carrots at all, which add sweetness.
Panini Pizza
- Time: 10 mins prep + 10-15 mins baking
- Cost: 70p per serving

Ingredients:
- 4 panini rolls
- 400g tin chopped tomatoes
- 4 cloves garlic, peeled
- 1 teaspoon dried mixed herbs
- 1 tablespoon tomato puree
- 75g reduced fat mature cheddar, finely grated
- Fresh herbs such as basil to serve (optional)
Method:
- Pre-heat the oven to 200 C / gas mark 6.
- Cut the panini rolls in half lengthways and place on a baking sheet.
- In a food processor, blitz the garlic. Add the chopped tomatoes, tomato puree and mixed herbs and blitz again until reasonably smooth.
- Spoon the tomato sauce over the panini rolls evenly. Top with grated cheese and bake for 10 - 15 minute until golden.
- Top with fresh herbs and return to the oven for another minute before serving.
