Easy Sweet Potato Soup {Warming and perfect for batch cooking}
This is one of my favourite soups - yummy sweet potato flavoured with rosemary, garlic and chilli. It's great for batch cooking as it freezes really well. Serve topped with crème fraîche and a side of crusty bread to make it extra special.
Easy Sweet Potato Soup
Serves: 4 as a main, 6 as a starter:
Time: 10 minutes prep + 20 minutes cooking

Ingredients:
1 tbsp olive oil
1 onion, peeled & diced
1 tsp dried rosemary
2 cloves garlic, crushed
½ tsp crushed chillies (or to taste)
1 kg sweet potatoes, peeled and diced
1 litre hot chicken or vegetable stock
Salt & pepper to taste
Crème fraîche to serve (optional)
Method:
Heat the oil in a large saucepan and fry the onion for around 5 minutes until soft.
Add the garlic, rosemary and chilli (if using) and cook for another minute.
Add the sweet potatoes and stock. If the stock doesn’t cover the potatoes add some boiling water to submerge them.
Season to taste. Bring to the boil, then simmer with a lid partially covering the pan for 15 – 20 minutes until the potatoes are tender.
Turn off the heat and blend the mixture until smooth. Serve topped with crème fraîche and extra chilli flakes if you like.
