Oat, Banana & Chocolate Chip Cookies {Egg & Gluten Free}

We absolutely love making these Oat, Banana & Chocolate Chip Cookies! They’re quick, versatile, refined sugar-free and healthier than you’re average cookie. They are perfect for baking with young kids as they are speedy and straightforward.

You only need bananas, oats and chocolate chips to make these cookies - but you could swap the chocolate chips for some chopped nuts or dried fruit. You could also add some extra flavours if you like such as cinnamon, orange zest or vanilla.


Oat, Banana & Chocolate Chip Cookies {Egg & Gluten Free}

  • Prep Time: 10 mins

  • Cooking Time: 15 - 20 mins

  • Makes: 4 cookies (easily scaled up)

Ingredients:

  • 1 ripe banana

  • 50g rolled oats

  • 40g chocolate chips

  • Oil for greasing, such as sunflower oil

Method

  1. Pre-heat the oven to 170 fan / 190 C / gas mark 5.

  2. Line a baking sheet with grease proof paper and grease lightly with oil.

  3. In a large bowl, mash the banana until smooth and gloopy.

  4. Stir in the oats and chocolate chips until well combined.

  5. Roll the mixture into 4 balls and then squash the balls to make a cookie shape and place on the baking sheet. This is easier to do with lightly oiled hands.

  6. Bake for 15-20 minutes until firm but springy and a little coloured. Best eaten within 24 hours but they can be kept for up to 48 hours covered in the fridge.
