How to make Welsh Cakes: Recipe with Step by Step Photos

Welsh Cakes are a cross between pancakes and scones. They are traditionally cooked on a bakestone or griddle pan, but a frying pan will work fine. Welsh Cakes are delicious served warm or cold. Split them in half and serve with butter and jam like a scone if you like.

Just to prove how easy they are to make, my 2 year old son Joshua is back (after his debut making shortbread) with step by step instructions below. Enjoy!


How to make Welsh Cakes: Recipe with Step by Step Photos

  • Makes:  Around 20
  • Time:  10 - 15 mins prep + 10 mins cooking
  • Cost:  5p per cake
  • Calories:  106 per cake

Ingredients:

  • 225g self raising flour
  • 100g butter (plus extra for greasing)
  • 75g sugar (plus extra for sprinkling)
  • 75g sultanas
  • 1 teaspoon mixed spice
  • zest of ½ an orange
  • 1 egg

Method:

1. Rub the butter into the flour to make breadcrumbs. Add the sugar, sultanas, spice, orange zest and egg. Mix well to combine while looking very pleased with yourself. The mixture should be a smooth dough.

2. Sprinkle flour onto the work top, rolling pin and your clean jumper. Roll out the dough until it is a half a centimetre thick. Cut the Welsh Cakes into circles with a cookie cutter or glass. Alternatively, roll the dough into ping pong ball sizes with your hands, then squash each ball into a cookie shape half a centimetre thick.

3. Melt a little butter in a large frying pan and fry the Welsh Cakes in batches turning once. They will need 2-3 minutes on each side until they are caramel brown. Add more butter to the pan between batches if necessary. Get your mum to do this bit (as the pan is hot) while you play with the spice rack and empty cumin onto yourself and the floor.

4. Sprinkle with sugar while still warm and munch. You can eat Welsh Cakes cold as they are, or split with butter and jam like a scone.
