Lemongrass and Lime Granita {Grown Up Slush Puppy}

I recently tried to make sorbet, but accidentally made granita. It's a bit more crunchy than sorbet, a bit like grown up slush puppy and perfect for this heat-wave we're having.

Granita can be a dessert or a drink. Enjoy a glass while lazing in the garden or send round glasses after a BBQ. It's so light and refreshing and as it's made a day in advance you can serve it straight from the freezer with no fussing.

Lemongrass and lime make this granita super refreshing and not too sweet. Lemongrass is lovely in desserts and has a kind of herby lemon flavour. This granita recipe is a mere 110 calories a serving. A guilt-free swap for your ice-cream. Enjoy.


Lemongrass and Lime Granita {a very grown up slush puppy}

  • Serves: 6

  • Time: 10 minutes prep + freezing time

  • Cost: 26p per serving (based on 6 servings)

Ingredients:

  • 950ml water

  • 150g white granulated sugar

  • 3-4 tablespoons prepped lemongrass in a tube or 2 lemongrass stalks

  • 2-3 limes, juice & finely grated zest of

  • Extra lime zest to garnish (optional)

Method:

  1. If you are using lemongrass stalks, cut them into 5cm lengths and give them a really good bash with a rolling pin or heavy-ish object.

  2. Place the water, sugar and lemongrass in a pan over a medium heat. Bring to the boil and simmer for 3 minutes stirring continuously until the sugar has dissolved.

  3. Leave to cool (remove lemongrass stalks if using) and add the juice and zest of 2-3 limes to taste. Pour into a large plastic box and freeze over night.

  4. When frozen solid, scrape a fork over the top of the frozen mixture to create small ice crystals. When all the solid mixture has been scraped, return to the freezer.

  5. When ready to serve, spoon the granita into chilled glasses and top with a little extra lime zest to make it look pretty if you like.
