Spicy Grilled Pineapple {Low Fat Vegan Dessert}

This is so simple it’s barely a recipe - pineapple wedges coated in spicy sugar caramelised under a hot grill. Warm, juicy pineapple encased in a ginger & cinnamon sugar crust - it’s so delicious. It’s nice to serve at a BBQ, but equally good in the winter as it’s warm and spicy.

As far as desserts go this is a pretty healthy option (if you’re on Slimming World you’ll just need to syn the sugar). It also works well with tinned pineapple. If you want to make them look pretty, leave the greenery attached to the pineapple - just be careful when grilling.


Spicy Grilled Pineapple {Low Fat Vegan Dessert}

  • Makes: 3-4 servings

  • Time: 10 mins prep + 5 mins grilling

  • Calories: 245 per serving

Ingredients:

  • 1 medium-large pineapple

  • 2-3 tbsp granulated sugar

  • 2-3 tsp ground cinnamon

  • 2-3 tsp ground ginger

Method:

  1. Using a large, sharp knife, slice the pineapple into 6-8 wedges from the top to the bottom and slice the core away from each of the wedges. You can leave the greenery attached or cut it off, whatever you prefer.

  2. Mix the sugar and spice together and sprinkle all over the fleshy sides of the wedges. You might have some of the spicy sugar left, or you might need to make up a bit more - it depends on the size of your pineapple.

  3. Place the pineapple wedges on a baking tray, skin side down, and pop under a hot grill for around 5 minutes until the sugar is bubbling and caramelised. If you have left the greenery attached to your pineapple make sure that part is not directly under the grill as it’s likely to get singed. Leave to cool for a few minutes before serving.
